Cheese Philosophy
Just like the other products on our shelves, our cheeses each tell a story of a place, a family, or a culture. But unlike the other products, our cheeses are very much alive. We store most of our cheeses in the cheese cave under our Cambridge store. Each day we get deliveries of perfectly aged cheeses from the cave. In the mornings we clean each cheese individually, removing the part of the cheese that touched the plastic wrap overnight.

New cheeses arrive at least once a week either from New England farms or from Europe, and many seasonal or small production cheeses come and go quickly!
